Falafel Burger from the MOM and WOW 2021 Diary
This recipe features a delicious meat free falafel burger!
Recipe ingredients for the falafel patties:
1 can of chickpeas, drained
1 clove of garlic, chopped
1 handful of fresh coriander
1 tsp ground cumin
1 tsp ground coriander
1/4 tsp chilli powder (optional)
1/2 cup cooked quinoa (or cooked lentils) Juice and zest from 1 lemon 2 tbsp flour of choice
Oil for frying
Recipe ingredients for the relish:
1/4 purple cabbage sliced thinly into strips
1/4 cup red wine vinegar
1/4 cup water
1 tsp brown sugar
salt & pepper
Recipe ingredients to serve:
4 burger buns (or rolls of choice)
Smashed avo
Mayonnaise
Siracha Fresh slices of tomato Fresh rocket (dressed with olive oil) Sweet potato fries Crispy battered onion rings Dipping sauce
Recipe Preparation for the falafel patties:
1. Add all the ingredients (except the oil) to a food processor. Pulse the mixture just until the ingredients are minced but not pureed, scarping down the sides as needed. The mixture should be rough.
2. With your hands, form the falafel mixture into 4 patties.
3. Fry them in a little oil in a hot pan until brown and crispy , about 5 minutes per side.
Recipe Preparation for the relish:
1. Place the cabbage in a large bowl.
2. In a small pot over medium heat, bring the red vinegar, water, brown sugar and seasoning to a boil.
3. Remove from the heat and pour over the sliced cabbage.
4. Leave to pickle for 5 to 10 minutes.
To Assemble:
1. Lightly toast the buns in a pan then a a generous dollop of smashed avocado.
2. Top with the falafel burger, mayonnaise, sriracha, tomato, cabbage relish and rocket.
3. Serve with crispy sweet potato fries, onion rings and dipping sauce of your choice.
