Impress your family by making something different. For some reason meatballs always makes me thing of Grandma’s cooking!
Brought to you from the 2019 MOM and WOW Diary.
INGREDIENTS:
500g beef mince
1 brown onion, coarsely grated
1 carrot, coarsely grated
3 garlic cloves, crushed
2 tbsp olive oil
2 x 400g cans diced Italian tomatoes
55g tomato paste
½ tsp dried basil
½ tsp dried oregano
1 cup grated Parmesan
Serves 6
PREPARATION:
Step 1 : Place the mince, onion, carrot and 2 garlic cloves in a bowl.
Use your hands to mix until well combined.
Shape the mixture into balls about 4cm in diameter.
Step 2 : Heat oil in frying pan over medium-high heat. Add half the
meatballs and cook, turning occasionally, for 3-4 minutes or until well
browned. Place on a plate and repeat with the remaining meatballs.
Step 3 : Bring tomatoes, tomato paste, basil, oregano and remaining garlic
to the boil in a saucepan over medium heat. Reduce heat to low and
simmer, covered, stirring occasionally, for 10 minutes or until sauce thickens.
Step 4 : Add meatballs to sauce and sprinkle with Parmesan. Cook over
low heat, stirring occasionally, for 20 minutes or until cooked through.
