Fun & Festive watermelon jelly slices from the MOM and WOW 2021 Diaries
A nostalgic summertime treat with an adults only twist!
Recipe ingredients:
1/2 medium-large watermelon
3 tins Koo fruit cocktail in syrup
1/4 cup syrup
5 tbsp gelatine powder
1 1/2 cups boiling water
1/2 cup rum or vodka (optional)
Recipe Preparation:
1. Using half a watermelon, cut half a centimetre off the bottom for balance if needed.
2. Scoop out the watermelon flesh and set aside. Score the inside of the watermelon – this makes it easier for the jelly to set.
3. Pour the tins of fruit cocktail, with the syrup, into the hollowed-out watermelon.
4. Add the sugar and gelatine to the boiling water and whisk slowly for two minutes until dissolved.
5. Add the alcohol, if using, and pour the mixture into the watermelon until it almost reaches the top. Mix well.
6. Refrigerate overnight to set fully.
7. To serve, slice the watermelon lengthwise and then into wedges.
