Whip together these Mediterranean cheat pizzas. Quick and Healthy!
This recipe is Vegetarian and yields 4 pizzas
Pizza Ingredients
4x40g wholegrain wraps
90g (1/3 cup) tomato paste
2 zucchini, thinly sliced
1 yellow sweet pepper, deseeded, thinly sliced
250g cherry tomatoes, halved
125g can black beans, rinsed, drained
100g feta, crumbled
60g baby rocket
2 tsp balsamic vinegar
Step 1
Preheat oven to 210°C/190°C (with fan). Line 2 large baking trays with baking paper.
Step 2
Place wraps on prepared trays. Evenly spread with tomato paste.
Divide the zucchini, pepper, tomato, beans and feta among wraps.
Bake for 10-12 minutes or until golden and crisp. Sprinkle with rocket and drizzle over balsamic to serve.
